My Pro Tips for the Best Results

After warming the yeast with the milk and sugar, make sure to let it sit in the mixing bowl for the full 10 minutes. This gives the yeast time to bloom and helps the dough rise beautifully later on.

Roll out your dough on a lightly oiled work surface or a silicone baking mat. This prevents sticking without having to add extra flour, which can dry out the dough.

Spread the crème fraîche and strawberry jam mixture in a nice, even layer over the dough before scattering your diced strawberries on top.

Cover the rolls with a clean kitchen towel the second they come out of the oven. This traps the steam and moisture inside, keeping them incredibly soft and fluffy.

Can I make these ahead of time?

Yes, these rolls keep beautifully! Of course, they’re absolute perfection when they’re super fresh and still a little warm right out of the oven on baking day.

But if you store them in an airtight container in a cool spot, they’ll stay good for a day or two. Just pop them in the microwave for a few seconds before eating, and they’ll taste almost like they were freshly baked!

Easy Variations

The Pan: If you don’t have a 12-inch (32 cm) round baking dish, no worries! You can just place the rolls on a standard baking sheet, leaving a little space between each one.

Rolling the Dough: If you don’t have a silicone baking mat handy, that’s totally fine. Just lightly oil your countertop so the yeast dough rolls out nice and smooth.

How to Make Strawberry Sweet Rolls

Directions:

First up, crumble the fresh yeast and add it to your mixing bowl along with the milk and sugar. Heat everything for 2 min. / 37 °C / speed 2. Let the mixture sit and activate in the bowl for 10 minutes.

Next, toss in the softened butter, egg, flour, and a pinch of salt. Knead everything for 6 min. / dough mode until it forms a beautifully smooth dough.

Let the dough rise right in the closed mixing bowl for 1 hour.

Once the dough has risen, turn it out onto a lightly oiled work surface or a silicone baking mat. Roll it out into a rectangle that’s roughly 12×16 inches (30×40 cm).

Stir the crème fraîche and strawberry jam together, then spread that creamy, fruity mixture evenly all over the dough.

Finely dice your fresh strawberries and sprinkle them right on top.

Tightly roll up the dough starting from the long edge. Place the log seam-side down and slice it into roughly 1-inch thick pieces.

Place the rolls into your baking dish, leaving a little space between each one, and let them rest, covered, for another 30 minutes.

Meanwhile, preheat your oven to 350°F.

Bake the strawberry rolls in the lower third of the oven for about 25 minutes, until they are beautifully golden brown.

Cover them with a clean kitchen towel right out of the oven—this is the secret to keeping them incredibly fluffy!

For the strawberry glaze, add all the ingredients (strawberries, powdered sugar, and crème fraîche) to your rinsed mixing bowl and blend for 10 sec. / speed 5.

Finally, use a pastry brush to spread that gorgeous glaze all over the rolls.

Enjoy!

Alright, I hope you have so much fun making these!
