Remove the frozen strawberries from the freezer and let them thaw slightly.
Pop the white chocolate in the fridge beforehand if needed (especially in the summer, so it doesn't get too soft).
Directions:
First, roughly chop the white chocolate and add it to the mixing bowl. Grate for 4 sec / Speed 7. Transfer to a small bowl and give the mixing bowl a quick rinse.
Next, insert the butterfly whisk! Add the cold heavy cream and vanilla sugar to the mixing bowl, then whip on Speed 3 until stiff peaks form.
Pro-Tip: It took me about 2 minutes and 55 seconds for the cream to get firm. Keep a close eye on it starting at the 2-minute mark though, as whipping time varies based on how cold your cream and bowl are—you don't want to accidentally make butter!
Transfer the whipped cream to a separate bowl.
Now add the mascarpone, quark, 100 g powdered sugar, and 1 tbsp lemon juice to the mixing bowl and blend for 5 sec / Speed 5.
Add the whipped cream back into the bowl and fold together for 3 sec / Speed 5. Transfer the mixture into a piping bag (optional, but it keeps your glasses looking super neat!).
Rinse the mixing bowl. Add the slightly thawed strawberries, 50 g powdered sugar, and 1 tbsp lemon juice to the mixing bowl, then puree for 20-30 sec / Speed 5 (depending on how frozen your strawberries still are).
Assembly and Serving:
Set out your dessert glasses and layer away: cream mixture, strawberry puree, cream mixture, strawberry puree, and finish with a generous sprinkle of grated white chocolate on top!
