First, peel the onion and garlic clove. Quarter the onion and halve the garlic, then add to the mixing bowl and chop 5 sec / speed 5. Scrape down the sides of the bowl with the spatula. If the pieces are still a bit too coarse, repeat this step.
Next, wash the red bell pepper and pat it dry. Remove the seeds and cut into bite-sized dice.
Add the diced bell pepper and olive oil to the onions in the mixing bowl and sauté 4 min / 120°C / Reverse / speed 1.
Next, add the rest of the ingredients—the canned diced tomatoes, beef broth, tomato paste, and seasonings—and bring to a simmer 6 min / 100°C / Reverse / speed 1.
Meanwhile, slice the sausages into coins. When the time is up, add them to the bowl and cook 9 min / 100°C / Reverse / speed 1.
If you love a creamier stew, stir in 2 to 3 tablespoons of sour cream or crème fraîche right near the end of the cooking time.
Garnish with chopped fresh parsley and serve hot!
Notes
Pasta, rice, potatoes, or crusty freshly baked bread make fantastic sides for this cozy sausage goulash.
Variations: Feel free to use tomato sauce/passata or diced fresh tomatoes instead of canned diced tomatoes. You can easily swap the beef broth for vegetable broth. Sweet corn makes a delicious addition to this goulash, too! Smoked sausages, kielbasa, or cabanossi add an extra punch of flavor to the stew—feel free to mix and match! This recipe also works great with plant-based sausages. Pro tip: Give the sliced sausages a quick sear in a skillet before adding them in! It gives them a lovely crispy texture and adds an extra layer of savory flavor. Got leftovers? Turn them into a cozy pasta bake the next day with some noodles and melted cheese!
