First, pour the water into the mixing bowl and crumble in the yeast. Warm for 2 min / 37°C / Speed 2.
Add the olive oil, salt, and flour, then knead for 4 min / Dough Mode until a smooth dough forms.
With lightly floured or greased hands, remove the dough from the mixing bowl and transfer it to a lightly oiled bowl. Cover with plastic wrap or a damp kitchen towel and let it rise in a warm spot for 2 hours.
Making the pizza sauce:
In the meantime, peel and quarter the onion, and peel and halve the garlic clove. Place them in the mixing bowl and chop for 3 sec / Speed 6. Scrape down the sides with a spatula and repeat once more.
Add the olive oil and sauté for 2.5 min / 120°C / Speed 1.
Now add the canned tomatoes, Italian seasoning, salt, and pepper, and let it simmer for 12 min / 100°C / Speed 1.
Once cooked, blend for 5 sec / Speed 4 and allow to cool.
Shaping and baking the pizza:
Preheat your oven to 250°C top/bottom heat.
Generously dust your work surface and hands with flour.
Divide the risen pizza dough into two halves and shape each half into a ball.
Gently press down the center of the dough ball with your fingertips. Repeat this motion, working your way outward from the center to the edge until you achieve a classic round pizza shape. Take your time and be gentle so the dough doesn't tear in the middle!
Finally, use the palms of your hands to flatten the dough further from the center outward, leaving a beautiful raised crust around the border.
Transfer the dough onto a pizza stone (or baking sheet), spread with pizza sauce, and load it up with your favorite toppings.
Place the pizza stone on the wire rack on the lowest oven shelf and bake for 10–15 minutes.

The pizza sauce makes enough for about 4 pizzas.If you prefer using dry yeast, just follow these simple steps:
First, whisk the dry yeast into the flour thoroughly.
Pour the water into the mixing bowl and warm for 1 minute / 37°C / Speed 1 (or simply use warm tap water).
Add all the remaining dough ingredients to the mixing bowl and knead on Dough Mode for 4 minutes.
