Add all the batter ingredients to the mixing bowl and blend for 1 minute, gradually increasing the speed from Speed 3 to 5, until completely smooth.
Let the batter rest in the refrigerator for about 15–30 minutes.
Heat a skillet over medium-high heat and lightly brush with a little oil.
Ladle some batter into the skillet and swirl immediately so the bottom is thinly and evenly coated. Cook the pancake over medium-high heat (around level 7 out of 9 on my stovetop).
As soon as the edges turn light golden brown, slip a spatula underneath and flip the pancake over. Cook the other side until lightly golden—this side cooks much faster!
Repeat with the remaining batter, brushing the skillet with a little extra oil between pancakes as needed.
Serve plain or stack 'em high with your favorite sweet or savory toppings. Enjoy!
