Zubereitung
Prep work:
400 g Chicken tenderloins
Pat the chicken tenderloins dry with paper towels and place them in a bowl.
Make the marinade:
1 Onion, 1 Garlic clove, 1 Small knob of fresh ginger
For the marinade, peel the onion, garlic, and ginger, add them to the mixing bowl, and chop for 5 sec / speed 6.
25 g Sesame oil
Add sesame oil and sauté for 2 min / 120 °C / speed 1.
1 tsp Ground coriander, 1 tsp Ground cumin
Add ground coriander and ground cumin, then sauté for another 1 min / 120 °C / speed 1.
25 g Soy sauce, ½ tsp Sambal Oelek
Finally, add soy sauce and Sambal Oelek, and purée for 10 sec / speed 7.
Pour the marinade over the chicken, toss well to coat, and let marinate in the fridge for at least 1 hour.
Make the peanut sauce:
100 g Roasted, salted peanuts
To make the peanut sauce, give the mixing bowl a quick rinse, then add the roasted peanuts and grind for 10 sec / speed 10. Scrape down the sides with a spatula and repeat. Transfer the ground peanuts to a small bowl and set aside.
1 Small garlic clove
Rinse the mixing bowl again. Peel the garlic, place it in the mixing bowl, and chop for 5 sec / speed 7.
1 tsp Sambal Oelek, 2 tsp Sesame oil
Add sesame oil and Sambal Oelek, and sauté for 2 min / 120 °C / speed 1.
10 g Brown sugar, ½ Lime
Next, add brown sugar and lime juice, and mix for 5 sec / speed 3.
200 g Coconut milk, ¼ tsp Salt
Finally, add coconut milk, ground peanuts, and salt, and cook for 8 min / 98 °C / speed 2.
Cook the chicken skewers:
To prepare the chicken skewers, soak 8 wooden skewers in water first, then pat dry.
Remove the marinated chicken from the bowl and thread onto the skewers.
Heat a nonstick skillet over medium-high heat and add a splash of high-heat cooking oil (like sunflower or peanut oil). Once the oil is hot and shimmering, place the chicken skewers in the skillet and sear until golden brown on both sides and cooked through. Depending on the size of your skillet, cook in two batches if needed.
Serve:
Transfer the skewers to a platter and serve warm alongside the creamy peanut sauce. Garnish with sesame seeds, fresh chives or cilantro, and lime wedges for an extra pop of flavor!
Notes
Great sides include rice, a fresh side salad, steamed veggies, or simply warm flatbread.
Adjust the Sambal Oelek to fit your personal spice preference.
You can easily swap out Sambal Oelek for yellow curry paste!
