First, preheat your oven to 230 °C (conventional top/bottom heat).
200 g Blueberries
Sort through the blueberries, rinse them gently, and pat them completely dry.
225 g All-purpose flour, 1½ tsp Baking powder, 1 tsp Baking soda, 1 pinch Salt
Next, whisk together the dry ingredients: flour, baking powder, baking soda, and salt. Toss the blueberries in one tablespoon of this flour mixture to keep them from sinking to the bottom during baking.
125 g Butter, 100 g Granulated sugar, 50 g Brown sugar, 2 Eggs
Add the softened butter, granulated sugar, brown sugar, and eggs to the mixing bowl and blend for 1 min / speed 5.
Pro Tip: Forgot to take your butter out of the fridge ahead of time? No problem at all! You can still use it right away—just set the controls to 1 min / 50 °C / speed 5.
150 g Plain yogurt, 50 ml Milk
Next, add the yogurt, milk, and the remaining dry ingredients (flour, baking powder, baking soda, salt) and mix for another 30 sec / speed 5 until you have a smooth batter.
Add the flour-coated blueberries to the mixing bowl and gently fold them in using a rubber spatula.
Line a muffin tin with paper liners and divide the batter evenly among them.
Place the muffin tin on the rack in the lower third of your oven and bake at high heat for 5 minutes. Then, turn the temperature down to 175 °C and bake for an additional 20 minutes. Let the muffins cool completely.
While the muffins are baking, rinse and thoroughly dry your mixing bowl.
150 g White chocolate, 10 g Coconut oil, Sprinkles
For the chocolate glaze, add the chopped white chocolate to the mixing bowl and chop for 5 sec / speed 6. Add the coconut oil and melt for 3 min / 45 °C / speed 2. Drizzle or spread the glaze over the cooled muffins and top with fun sprinkles, if desired!
