50gCrème fraîche or sour cream(approx. 2 oz)
For Garnish
Cress, fresh parsley, or dill
Toasted seedse.g., pumpkin seeds or sunflower seeds
Crème fraîche
Zubereitung
1 Onion, 10 g Ginger
Peel the onion and ginger. Place both into the mixing bowl and chop for 5 sec / speed 5. Scrape down the sides of the bowl with the spatula.
10 g Olive oil
Add the olive oil and sauté for 3 min / 120°C (250°F) / speed 1.
200 g Potatoes, 1 Pear
Meanwhile, peel the potatoes and cut them into roughly 2–3 cm chunks. Peel and core the pear, then cut it into 2–3 cm chunks as well. Add the potato and pear pieces to the mixing bowl.
800 ml Vegetable broth, ½ tsp Salt, ¼ tsp Black pepper
Add the vegetable broth, salt, and pepper. Cook for 20 min / 100°C (210°F) / speed 1 until the potatoes are tender. The exact time will depend on the size of your potato chunks.
500 g Beets
Remove the pre-cooked beets from the package, cut into rough chunks, and add them to the mixing bowl along with all the juice from the package. Warm through for 1 min / 100°C (210°F) / speed 1.
1 tbsp Vinegar, 50 g Crème fraîche or sour cream
Next, add the crème fraîche and vinegar to the mixing bowl. Puree the soup for 30 sec / speed 5–9, gradually increasing the speed, until smooth and gorgeously velvety.
½ tsp Salt, ¼ tsp Black pepper
Taste and adjust seasoning with extra salt or pepper if needed. The natural sweetness of the pear usually balances everything out, so no additional sugar is needed.
Cress, fresh parsley, or dill, Toasted seeds, Crème fraîche
Ladle the piping hot beet soup into bowl plates and garnish with your favorite toppings.Pro Tips: The short warming time for the beets in step 5 is key to protecting the heat-sensitive pigment (betanin) and keeping that stunning, bright color intact. Make sure to pour in all the juice from the beet package too—it's packed with natural color and flavor! Finally, adding the vinegar at the end helps lock in and intensify that vibrant ruby hue.
