This wonderfully moist and fluffy hazelnut cake made with ground hazelnuts is an absolute winner, thanks to a super easy batter whipped up in the Thermomix®.
Preheat your oven to 160°C (320°F) (convection). Prep your loaf pan by giving it a good grease or lining it with parchment paper.
150 g Sugar, 1 packet Vanilla sugar, 150 ml Oil, 3 Eggs
Add the sugar, vanilla sugar, oil, and eggs to the mixing bowl and mix everything for 1 min. / speed 5.
130 ml Milk, 200 g Ground hazelnuts, 130 g All-purpose flour, 0.75 packet Baking powder, 1 pinch Salt
Next, add the milk, ground hazelnuts, all-purpose flour, baking powder, and salt, and mix again for 30 sec. / speed 5.
Pour the batter into your prepared pan and bake for one hour. Let the cake cool completely once it's done.
100 g Milk chocolate, 1 tbsp Coconut oil
Break the chocolate into pieces, add it to the rinsed mixing bowl, and chop for 5 sec. / speed 8. Add the coconut oil and melt the chocolate for 3 min. / 50°C (120°F) / speed 2.
50 g Hazelnuts
Pour the gorgeous chocolate glaze over the cake and spread it out evenly. Finally, roughly chop the hazelnuts and sprinkle them right on top!
