Preheat your oven to 180 °C (conventional top/bottom heat). Line two baking sheets with parchment paper.
Instructions:
Add all ingredients except the flour and baking powder to the mixing bowl and combine for 30 sec. / speed 3.5.
Then add the flour and baking powder, and process on the dough setting for 4 min. until a smooth dough forms.
The dough will still be very soft. Wrap it tightly in plastic wrap and chill in the fridge for at least 1 hour.
After chilling, briefly knead the dough again with your hands on a floured surface or, even better, a silicone mat. If it still feels too sticky, just knead in a little extra flour.
Lightly dust your work surface and the top of the dough with flour again.
Pro Tip: Always add flour gradually. Adding too much flour will dry out the dough, making it crumbly.
Place a piece of parchment paper over the dough and roll it out to 3–5 mm thick with a rolling pin—this prevents it from sticking to the pin!
Remove the top parchment paper, cut out cookies close together using holiday cookie cutters, and transfer them onto the prepared baking sheets, leaving a little space between each.
Pro Tip: Dip your cookie cutters in flour occasionally to keep the dough from sticking.
Gather up the dough scraps, gently knead them back together, roll out, and cut out more cookies until you've used all the dough.
Bake the sheets one at a time on the lower rack for 10–13 minutes, until the cookies are just lightly golden.
Let the cookies cool completely, then enjoy them plain or decorate as desired!
