Cut the beef stew meat into roughly 3x3 cm cubes, sear in a skillet, and set aside.
Note: You can also sauté the beef right in your Thermomix® if you'd like to skip browning it first!
Instructions:
Wash and seed the bell peppers, cut into large chunks, and place in the mixing bowl. Chop for 2 sec / speed 5 and transfer to a bowl.
Peel and quarter the onion. Set the dial to 10 sec / speed 5 and drop the onion quarters and garlic clove through the lid opening while running.
Scrape down the sides of the bowl with the spatula and repeat.
Add the oil and sauté for 3 min / Varoma® / speed 1.
Note: If you didn't sear the beef beforehand, add it to the mixing bowl now and sauté for 5 min / Varoma® / reverse mode / speed 1 before adding the water, tomato paste, and spices.
If your beef is already seared, add it to the mixing bowl along with the hot water, tomato paste, salt, sweet paprika, smoked paprika, black pepper, and vegetable bouillon. Cook for 40 min / 100° C / reverse mode / speed 1.
When the time is up, add the chopped bell peppers and milk, then cook for another 30 min / 100° C / reverse mode / speed 1.
Notes
We usually serve this with spiral pasta (like fusilli or trulli) cooked separately on the stovetop, but this beef goulash is also incredible served over rice or potatoes!
If you choose potatoes as your side dish, you can cook them right in your Thermomix® at the same time.
Just toss 1 kg of peeled, diced potatoes with 1 tsp salt, place them in the steaming attachment, and let them steam during the last 30 minutes of cooking. Just make sure to set it to Varoma® instead of 100 °C.
Feel free to swap the smoked paprika for hot paprika if you want a little kick!
