First, preheat your oven to 175 °C (conventional bake).
2 Apples
Peel and core the apples, then cut them into small cubes.
250 g Butter, 300 g Granulated sugar, 1 packet Vanilla sugar, 4 Medium eggs
Add the softened butter, sugar, vanilla sugar, and eggs to the mixing bowl and combine for 1 min / Speed 5.
Pro Tip: Forgot to take the butter out of the fridge in time? No worries! You can still use it right away—just set the dial to 1 min / 50 °C / Speed 5.
250 g All-purpose flour, ½ packet Baking powder, 1 tsp Ground cinnamon
Next, add the flour, baking powder, and cinnamon, and mix for another 30 sec / Speed 5 until you have a smooth batter.
100 g Walnuts
Finally, add the diced apples and walnuts to the mixing bowl and fold them into the batter using a spatula.
Line the bottom of a springform pan with parchment paper, pour in the batter, and bake on the lower rack of the oven for 1 hour. If the top gets too dark while baking, loosely tent it with aluminum foil.
Notes
Not a fan of cinnamon? Feel free to leave it out!
You can also mix raisins or chocolate chips right into the batter.
Serve the cake plain, dusted with powdered sugar, or with a drizzle of caramel sauce.
