First, add the softened butter, granulated sugar, brown sugar, and vanilla extract to the mixing bowl and mix for 3 min / speed 4.
Next, add the eggs and mix for 1 min / speed 4.
Finally, add the flour, baking powder, baking soda, and salt, and mix for 20 sec / speed 4.
Transfer the finished cookie dough into a separate mixing bowl.
Set aside 50 g of the chocolate chips, and use a spatula to gently fold the rest into the dough.
Cover the bowl and place it in the fridge to chill for about 1 hour.
When ready to bake, line a baking sheet with parchment paper and preheat your oven to 190 °C fan (convection).
Scoop 6 generous, tablespoon-sized mounds of dough onto the baking sheet, leaving plenty of room between them because these cookies are going to be big!
Press the dough mounds down slightly and top with a few of the reserved chocolate chips.
Bake the cookies for 10–13 minutes, until they are lightly golden around the edges. They should still look soft in the center.
Let them cool on the baking sheet for about 2 minutes after baking. Then CAREFULLY remove them from the sheet and transfer them to a wire cooling rack or plate. Note: The cookies will be very soft right out of the oven and firm up as they cool. If left to cool completely on the baking sheet, they will stick to the parchment paper and easily break when you try to move them.
This recipe yields about 18 large cookies, which works out to 3 baking sheets with 6 cookies each.
You can bake the sheets one after another or bake 2 sheets at the same time. If baking two sheets at once, the baking time might take a minute or two longer, so keep a close eye on them toward the end!
