This fruity apple cheesecake with a crispy streusel topping combines three mouthwatering layers into one amazing sheet cake, and it's an absolute breeze to whip up in your Thermomix®!
Line a small baking pan (about 30°C (90°F)m x 20°C (70°F)m) with parchment paper and grease the sides. Go ahead and preheat your oven to 180°C (350°F) conventional (top and bottom heat).
250 g cold butter, 250 g sugar, 1 egg, 500 g all-purpose flour, 1 packet vanilla sugar, 1 packet baking powder
Since the amount of dough is a bit too much for the Thermomix® to handle all at once, you'll prepare it in two batches. First, add half of the ingredients (125 g butter, 125 g sugar, ½ egg, 250 g all-purpose flour, ½ vanilla sugar, ½ baking powder) to the mixing bowl and process for 30 sec. / speed 5 until crumbly.
Pro tip: Just whisk the egg in a small cup and pour in half of it (about 25 g) for each batch!

Repeat this process with the second half of the ingredients. Press the first batch firmly into the bottom of your prepared pan to form the crust. Set the second batch aside to use as your streusel topping, and let's move on to the cheesecake filling. (No need to wash the mixing bowl!)
500 g quark, 300 g cream cheese, 200 g sour cream, 1 egg, 200 g sugar, 1 packet vanilla pudding mix
Now, add the quark, cream cheese, sour cream, egg, sugar, and vanilla pudding mix to the bowl. Blend everything for 50 sec. / speed 4 until you have a beautifully smooth cream. Spread this mixture evenly over your shortbread crust and let's get started on the apple filling. (Again, no need to wash the mixing bowl!)
First, peel and core the apples, then dice them into small cubes. Toss the apple pieces into the mixing bowl along with the lemon juice, sugar, cinnamon, and vanilla sugar. Whisk the half packet of pudding mix with 50 g of water until smooth, and pour that in as well. Now, let everything cook down for 7 min. / 100°C (210°F) / reverse / speed 1. Once that's done, spread the apple mixture evenly over the cheesecake layer.
Finally, generously sprinkle those reserved streusel crumbs all over the top. Bake the cake in the lower third of your oven for about 55 minutes, until the streusel is perfectly golden brown and crispy. This cake is absolutely heavenly served with a dollop of warm vanilla sauce!
Notes
This recipe is optimized for a small baking pan (30 cm x 20 cm), which gives the cake a nice height of about 4 cm. You can totally bake this on a standard-sized baking sheet if you prefer! Just keep in mind that the cake will be quite a bit thinner, and you'll want to reduce the baking time by about 10–15 minutes.
