2 Apples, 15 g Butter, 50 g Brown sugar, 15 g Lemon juice, 1 TL Cinnamon, 4 g Cornstarch, 10 g Water
Let's start with the apple filling: Peel and core the apples, then dice them into small cubes (about 5 mm). Add the butter to the mixing bowl and melt it for 2 min. / 50°C (120°F) / speed 2. Add the sugar, lemon juice, and cinnamon, and mix everything for 10 sec. / speed 3. Toss in the apples and let it all simmer without the measuring cup for 6 min. / 100°C (210°F) / reverse / speed 1. Dissolve the cornstarch in the water and stir it in during the last minute of cooking. Let the filling cool down completely.
130 g Butter, 3 Egg yolk, 1 TL Vanilla extract, 100 g Brown sugar, 240 g Flour, 2 TL Cinnamon, 0.5 TL Baking powder, 0.25 TL Salt
Preheat your oven to 180°C (350°F) (standard bake). Mix the dry dough ingredients together, add them to the rinsed mixing bowl along with the remaining ingredients, and knead everything for 1 min. / speed 4 until a dough forms.
Transfer the dough to your workspace and roll it into 35 g balls (about 2 tbsp each). Place them on your baking sheets with a little space in between, and use the back of a spoon to press a small well or indentation into the center of each one.
2 Apples
Fill each indentation with about 1 tbsp of the cooled apple filling. You want them to form cute little mounds on top!
Bake both sheets, one after the other, for about 12 minutes.
Important: Don't move the cookies right after baking—they are super fragile! Let them cool completely right on the baking sheet.
