200 g Water, 30 g Milk, 30 g Sugar, ½ cube Fresh yeast
First, crumble the yeast into the mixing bowl along with the milk, sugar, and water. Warm for 3 min / 37°C (100°F) / Speed 1.
500 g Bread flour (Type 550), 80 g Softened butter, 1 Egg, 2 tsp Salt
Next, add the flour, softened butter, salt, and egg, and knead for 5 min / Dough mode until a smooth dough forms.
Transfer the dough to a lightly oiled bowl, cover, and let it rise in a warm spot for about 1 hour, or until noticeably puffed up.
Once the dough has risen, it's time to shape your buns! This recipe makes 10 buns at 90 g each. I recommend using a kitchen scale so they all bake up evenly.
Shape each portion into a tight ball by rolling it against your counter to create good surface tension. Check out my short video to see exactly how to do it!
Place 5 dough balls onto a baking sheet lined with parchment paper, leaving plenty of space between them. Gently press down on each ball with the palm of your hand to flatten slightly.
Cover and let them rise in a warm place for another hour.
2 tbsp Milk, 2 tbsp Water, 1 Egg
In the meantime, whisk the egg, milk, and water together. Make sure your egg and milk are truly at room temperature—if they're cold, the buns might deflate when brushed!
Preheat your oven to 200°C (400°F) (top/bottom heat) toward the end of the second rise time.
Sesame seeds
Brush the first batch of buns with the egg wash mixture and sprinkle with sesame seeds.
Bake in the lower third of the oven for about 15 minutes, until the burger buns are gorgeous and golden brown.
Note: Every oven is a little different, so they might need an extra minute or two!
Oregano and Parmesan
Meanwhile, grate a bit of Parmesan cheese and mix it with a pinch of oregano in a small bowl.

Right before the first batch finishes baking, brush the second batch of buns with the egg wash and sprinkle with the Parmesan-oregano mixture.
Remove the first baking sheet from the oven, transfer the buns to a wire cooling rack, and cover them with a clean kitchen towel. This traps the steam and keeps them wonderfully soft!
Bake the second tray for about 15 minutes as well, then cover and let cool completely on a wire rack.
Notes
These buns taste best baked fresh in the morning and served the same day, but they freeze wonderfully too!
It's super popular to toast the buns or give the cut sides a quick grill before piling on your burger toppings.
Pro tip: Spread a little butter on the cut sides of the buns and toast them in a skillet until golden brown. So good!
