270 g Water, 20 g Brown sugar, 15 g Fresh yeast, 10 g Salt
First, add the water, yeast, sugar, and salt to the mixing bowl and warm for 2 min. / 37°C (100°F) / speed 2.
475 g Bread flour (Type 550)
Add the flour and knead for 5 min. / speed 1 until a smooth dough forms.
Transfer the dough to a lightly oiled bowl and let it rise in a warm spot for about 1 hour.
Once risen, divide the dough into 6 equal pieces. Shape each piece into a smooth ball.
To shape, take a piece of dough in your hand and gently fold the edges under toward the center until the top is nice and smooth. Roll it against your work surface to round it out, then place it on the baking sheet.
Cover and let rise for another 15 minutes.
30 g Sugar, 2 l Water
In the meantime, bring about 2 liters of water and 30 g of sugar to a boil in a large pot, and preheat your oven to 190°C (375°F) convection.
475 g Bread flour (Type 550)
After the second short rest, poke a small hole in the center of each dough ball using your finger or the end of a wooden spoon handle. On a lightly floured surface, gently swirl the handle in circular motions to enlarge the hole.
Gently stretch the hole a bit more with your fingers.
Drop the shaped bagels into the simmering water bath a few at a time, poaching them for about 30 seconds per side.
Transfer them to a clean kitchen towel or paper towels and gently pat dry.
Sprinkle the bagels with your favorite seeds or toppings, such as sesame seeds, poppy seeds, pumpkin seeds, or sunflower seeds.
Pop them into the oven and bake for 18–22 minutes until golden brown and delicious.
